  • 3 large heirloom tomatoes (weighing about 2 pounds), seeded and finely chopped.
  • 3/4 pound of fresh mozzarella cheese, cut into half-inch pieces.
  • 1/2 cup of loosely packed basil leaves, chopped.
  • 1/3 cup of olive oil.
  • 1/4 cup of lemon juice.
  • 1 finely chopped shallot.
  • 1 minced garlic clove.
  • 1 teaspoon of sugar.
  • 3/4 teaspoon of salt.
  • 1/2 teaspoon of grated lemon zest.
  • 1/4 teaspoon of pepper.
